Marlene M. Most, Ph. D., RD, LDN Dr. Marlene Most, Nutrition Manager, comes to St. James Place from Louisiana State University and the Pennington Biomedical Research Center. Marlene established and directed the metabolic kitchen at the Pennington Center for 17 years, which was sited by TIME magazine as "what may be the most sophisticated metabolic test kitchen in the country." As principal investigator in numerous studies, Marlene examined cardiovascular benefits of various modified diets and functional foods. Most notably, Marlene was instrumental in the Dietary Approaches to Stop Hypertension (DASH) studies, funded by the National Heart, Lung, and Blood Institute, NIH, which established a highly effective dietary pattern for lowering blood pressure. While at LSU, Marlene taught the Quantity Foodservice Production courses and Management in Dietetics.
